Recipe to make delicious mixed vegetable and dry fruit vegetable
Material
Oil – 5 tbsp
Cumin – 1 tsp
Asafoetida – a pinch
Chilli and ginger paste – 1 tsp
Sugar – 1 tsp
Papdi – 100 grams
Brinjal – 100 grams
Potato – 100 grams
Sweet Potato – 100 grams
Turmeric powder – pinch
Green coriander – half cup

How to make Mix Vegetable Sabji
First, heat oil in a pan. Add cumin, asafoetida, and chilli ginger paste and fry for 2 minutes. Next, add chopped papdi, brinjal, potatoes and sweet potatoes and continue stirring for 3 minutes. Then, add turmeric powder and half cup of water, cover and cook on low flame. Finally, add chilli powder, coriander and garam masala and mix well.
After cooking, add sugar, green coriander and grated coconut and cook for 2 more minutes. Serve it with hot roti. Mixed vegetable vegetable is very beneficial for health, because it contains various vegetables, which are rich in nutrients.
Nutty Vegetable Ingredients
four medium potatoes
a cup of peas
a cup of makhana
A cup of cashews and almonds
a cup of curd
one cup tomato pulp
five bay leaves
five chopped green chillies
a quarter piece rattanjot
five large cardamoms
2 tbsp ground ginger
half cup ghee
1/4 tsp asafoetida
one teaspoon garam masala
1/4 tsp turmeric powder
Three-fourth teaspoon red chili powder
Green Coriander – 2 tbsp
salt as per taste
Method to make dry fruits
Peel the potatoes and cut them into 8 pieces. Then, heat ghee and fry the potatoes until golden. Add cashew nuts, almonds and makhana in the same ghee and fry them and take them out. Add bay leaves, cloves, cinnamon, black cardamom, ratanjot and asafoetida to the remaining ghee. When the spices start crackling, dissolve salt, turmeric, red chilli and coriander in a quarter bowl of water and add it. Fry the spices well.
When the color becomes good, remove the Ratanjot. Add ginger along with tomato pulp and fry well. Then, add curd and fry. Add green chillies, potatoes and peas and mix well. Add half a bowl of water and cook until the potatoes are cooked. Add fried makhana and simmer for 10 minutes. Finally, add fried cashews, almonds, garam masala and coriander leaves and simmer.
