A new twist on traditional sweets
It is impossible to talk about Indian sweets and not mention Balushahi. Balushahi is especially known for its crunchy and sweet taste. Material:
For Balushahi:
- Flour: 2 cups
- Ghee: 1/2 cup (for making thick dough)
- Baking Powder: 1/4 tsp
- Curd: 1/4 cup
- Water: As per need
- Ghee or oil: for frying
For syrup:
- Sugar: 1 cup
- Water: 1/2 cup
- Cardamom powder: 1/4 teaspoon
- Saffron threads: 4-5 (optional)
- Lemon juice: 1/2 teaspoon
For decoration:
- Pistachios or almonds: finely chopped
Method of preparation:
1. Preparing the dough:
- Mix flour, baking powder and ghee well in a large vessel.
- Add curd to it and mix it gently and knead a stiff dough by adding water as required.
- Keep the dough covered for 15-20 minutes.
2. Making Balushahi:
- Make small balls from the kneaded dough.
- Press each ball lightly with your hands and make a hole in the center with your thumb.
- After all the Balushahi are ready, keep them covered.
3. Balushahi Fry:
- Heat ghee in a pan on medium flame.
- Add Balushahi in ghee and fry on low flame till it becomes golden brown.
- Take them out and place them on a kitchen towel so that excess ghee is removed.
4. Preparing the syrup:
- Mix sugar and water in a pan and cook on low flame.
- Add cardamom powder, saffron and lemon juice to it so that crystals do not form in the syrup.
- When one string of syrup is ready, turn off the gas.
5. Dip Balushahi in syrup:
- Add fried Balushahi in lukewarm syrup and let it sit for 5-10 minutes.
- Take them out and let them cool.
6. Garnishing and Serving:
- Sprinkle pistachios or almonds on Balushahi and serve.
Tips:
- While kneading the dough, do not make it too smooth, only then the Balushahi will become crispy.
- Cook the syrup till the consistency of one string only, do not make it too thick.
- While frying, cook the Balushahi on low flame so that it becomes crispy from inside.
