How to make Dal Pakwan
To make Sindhi flavored dal, first clean the chana dal. After this, wash the lentils with water once or twice and put them in the pressure cooker. Add water, turmeric and a pinch of salt to it as required, cover and let it cook. When the cooker takes 5-6 whistles, turn off the gas and let the pressure release on its own.
After a few seconds, add chopped tomatoes and fry till they become soft. Now add coriander powder and garam masala and cook the tomatoes for one more minute. Meanwhile, open the lid of the cooker, take out the gram dal and put it in the pan and stir it with a spoon. After cooking the dal for 2-3 minutes, turn off the gas and mash the dal lightly with the back of a big spoon. Gram dal is ready.
Now put all purpose flour in a utensil and make a vegetable. Add celery and salt as per taste to it and mix. Then add one spoon of oil. Now add water little by little and knead a hard dough. Keep the dough covered with a cloth for half an hour. After the fixed time, knead the dough once again and make balls out of it. Now roll a thick roti from the dough and make holes in the whole roti with the help of fork and spoon.
Meanwhile, put oil in a pan and heat it. When the oil becomes hot, put prepared roti in it and deep fry it. Due to having holes in the roti, the roti will not puff up while frying. In the same way, after breaking all the balls, giving them the shape of roti, deep fry them and prepare the dish. Bake them till they turn golden brown. Tasty lentil curry is ready. Add lemon juice, tamarind water to the dal and serve on a plate sprinkled with finely chopped onions and chaat masala.
