Flour- 2 cups
Semolina- 1 cup
Oil- 2 spoons
salt as per taste

Ingredients for filling for shortbread

Potato- 250 grams
Oil- 1 teaspoon
Asafoetida – 2 pinches
Garam masala- half spoon
Coriander powder- 1 tsp
Green chilli – 2 finely chopped
salt as per taste
Green Coriander – 2 tsp chopped
Dry mango powder- half spoon

This is the way to make potato shortbread

To make potato shortbread, first knead the dough. For this, mix flour and all its ingredients in a big vessel and knead a soft dough with the help of lukewarm water. Now keep the shortbread dough covered for about half an hour. Boil the potatoes well in the cooker, peel them and mash them. Now heat oil in a pan and add mashed potatoes and all the spices mentioned for pitti and fry for 2-3 minutes.

Take out the shortbread filling in a vessel to cool down. Now break a small ball from the dough and make it a little bigger and fill it with one or one and a half teaspoon of filling. Now fold the Kachori from the edges and close it well.

Now lightly grease this dough and roll it. Prepare all the kachoris in the same way and fry them until they turn brown. Keep in mind that kachori should always be cooked on medium flame.
