We are talking about Veg Kolhapuri. This is a famous dish of Maharashtra. The taste and spiciness of his recipe is so amazing that once he eats it, he never forgets its taste.

Ingredients to make Veg Kolhapuri

  • Carrot – 1/2 cup chopped
  • Flowers – 1/2 cup chopped
  • Potato – 1 cup chopped
  • French Beans – 1/2 cup chopped
  • Jaggery – 1 cup chopped
  • Capsicum – 1/2 cup chopped
  • Jackfruit – 1 cup chopped
  • Onion – 1 cup chopped
  • Tomato – 1/2 cup chopped
  • Raw Coconut – 1/2 cup grated
  • Cashews – 1/2 cup (roasted)
  • Cashew paste – 3-4 tbsp
  • Raisins – 10-15 pieces
  • Coriander Powder – 1 tbsp
  • Garam masala – 1 teaspoon
  • oil as per requirement
  • salt to taste
  • for tempering
  • Ghee – 5 tbsp
  • Whole Mustard – 1/2 tsp
  • Asafoetida – 1/2 tsp
  • sweet lime

Method to make Veg Kolhapuri

1. First of all we will heat oil in a pan. When the oil is hot, add chopped onion and fry until it turns golden. When the onion is fried well, add chopped tomatoes to it and cook until it becomes soft.

2. When the tomatoes become soft, add coriander powder, red chili powder, garam masala powder, turmeric powder and mix well.

3. Now we will add chopped vegetables (chopped carrots, potatoes, French beans, flowers) and mix everything well. After mixing well, cook it on medium flame for 6-8 minutes.

4. After cooking all the chopped vegetables for proper time, add chopped bottle jaggery, jackfruit, capsicum, fresh coconut, roasted cashews, ground cashews and raisins and mix everything well.

5.When we mix everything well, we will add salt to it and mix it well again.

6. When this mixture is cooked well, we will add tadka to this mixture. To make tadka, heat ghee in a separate pan and add mustard seeds, asafoetida and curry leaves. When mustard, asafoetida and curry leaves start crackling, add it to the Veg Kolhapuri mixture.

7. Your Veg Kolhapuri is ready. We can serve it with hot roti, naan or rice.
