Ingredients to make Bengali Chicken Rezala-
To marinate chicken-
-1 kg chicken
-1 tbsp ginger garlic paste
-1 cup whipped curd
To make paste-
-10-12 nuts
-2 tbsp white poppy seeds
-4-5 green chillies
For curry-
-2 tbsp oil
-4 tbsp ghee
-3-4 cloves
-6-8 whole black peppers
-2 inch cinnamon stick
-2 whole green cardamoms
-2 whole black cardamoms
-4-5 whole dry red chillies
-1 teaspoon white chili powder
-2 teaspoon salt
-1 teaspoon garam masala powder
-½ cup onion paste
-2-3 drops kewra essence
– 1 pinch saffron (soaked in 1 teaspoon milk)
To marinate chicken-
To marinate the chicken, first of all mix chicken, ginger garlic paste and curd in a bowl, marinate it for an hour and keep it aside. Now soak cashews and poppy seeds in 2 tablespoons hot water for 10 minutes. – Prepare a paste by adding green chillies along with cashews and poppy seeds soaked in water in a blender.
To make Chicken Rejla Curry-
– Heat 3 tablespoons ghee and oil in a pan. When the ghee is hot, add cloves, black pepper, cinnamon, green cardamom, black cardamom and dry red chilli in the pan and fry for 10-15 seconds. – After this, put the marinated chicken pieces in the pan and fry for 4-5 minutes while stirring continuously. Now add the remaining marinated paste, cashew and poppy seeds paste, white chilli powder, salt and garam masala powder to the pan and mix well. After this, add onion paste and 1 cup water in the pan and mix well. Lower the flame, cover the pan with a lid and cook for 40-50 minutes, until the chicken is cooked well. While cooking the chicken, keep stirring it occasionally. Finally add 1 tablespoon ghee and kewra essence and mix the chicken well. Now test the salt and add saffron soaked in milk and serve with hot roti or rice.
