- Chaat masala: 1/2 teaspoon
- Salt: as per taste
- Water: As per need
For frying:
- Oil: for deep frying
Method of preparation:
1. Marinating Mutton:
- Wash the mutton pieces and keep them in a vessel.
- Add ginger-garlic paste, curd, red chilli powder, turmeric, salt and mustard oil to it.
- Mix it well and marinate for 1-2 hours so that the spices dissolve well in the mutton.
2. Parboiling Mutton:
- Add marinated mutton in a pressure cooker and cook for 2-3 whistles.
- Half cook the mutton and drain off the excess water.
3. Preparing the Crispy Coating:
- Mix gram flour, rice flour, celery, coriander powder, garam masala, chaat masala and salt in a bowl.
- Prepare a thick solution by adding water little by little.
4. Coat the Mutton:
- Dip the cooked mutton pieces in the prepared solution, so that each piece is coated well.

- Heat oil in a pan.
