for stuffing:

– 4-5 boiled potatoes

– 1/2 cup peas (boiled)

– 1 tsp ginger paste

– 1 green chilli (finely chopped)

– 1 tsp garam masala

– 1 tsp red chilli powder

– 1/2 tsp turmeric powder

– 1 tsp coriander powder

– 1 tsp dried mango powder

– 1/2 tsp cumin

– Salt to taste

– Oil (for frying)

Method:

1. Prepare the dough:

First of all, add ghee and salt to the flour and mix well. After this, add water little by little and knead a hard dough. Cover the dough and keep it for 20 minutes.

2. Prepare the stuffing:

– Heat some oil in a pan and add cumin seeds to it.

– When the cumin starts crackling, add ginger paste, green chillies and peas to it.

– After this add mashed potatoes, turmeric, coriander powder, garam masala, red chili powder and salt and mix well.

– Cook the mixture on low flame for 4-5 minutes and finally add dry mango powder to it and turn off the gas.

– Let the stuffing cool down.

3. Make Samosas:

– Make small balls of the dough and roll them into round shapes.

– Cut it in half from the middle so that it becomes two parts.

– Fold one half like a cone and seal it by applying water on the edges.

– Now fill the prepared stuffing in it and then seal the edges well so that the samosas do not open while frying.

4. Frying:

– Heat oil in a pan. The oil should be on medium flame.

– Fry the samosas until they are golden and crisp. It is better to fry the samosas on low flame so that they get cooked well from inside as well.

Serve:

Your delicious and spicy samosas are ready! Serve them with green chutney or sweet tamarind chutney along with hot tea.
