Contents of Kothimbir Vadi
2 cups coriander leaves
1/2 tsp ginger paste
2 teaspoons sesame seeds
1 teaspoon ground turmeric
1/2 tsp cumin powder
3 medium chopped green chillies
1 teaspoon sugar
1 cup virgin olive oil
1 cup gram flour
1/2 tsp garlic paste
1 teaspoon red chili powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
Salt as needed
2 pinches of baking soda
How to make Kothimbir Vadi (Coriander Leaves Fritters)
1 green coriander, wash and strain
Wash the coriander leaves thoroughly and drain the excess water. Spread them on absorbent paper napkins and pat them to remove any moisture.
2 leaves finely chopped
Keep aside to dry. Finely chop the coriander leaves.
3 Mix all the ingredients
Mix all the ingredients except oil with coriander leaves. Add salt and spices.
4 Prepare the dough
Mix well. The flour starts to get moist as it is mixed and this will help it bind together.

Shape the dough into a cylinder or spread it on a greased dhokla plate.
6 Steam It
Steam the dough in a steamer or pressure cook without whistle for 20 minutes or till it hardens.
7 Cut them into desired shapes
Chill the dough and cut it into round or square shapes with a knife. Keep the slices thin so that they fry evenly and well.
