Amazing Rajma Chawal recipe: with a twist

Rajma Chawal is a dish that has a special place in Indian food. It is prepared and eaten with great love in every household, especially in North India. However, many times people get bored of preparing it in the same way. That is why, today we have brought for you a unique and delicious recipe of Rajma Chawal, by preparing which you can bring a new taste to your food.

Material:

for rajma curry:

– 1 cup rajma (soaked overnight)

– 2 large onions (finely chopped)

– 3 tomatoes (made into a paste)

– 2 green chillies (finely chopped)

– 1 inch ginger (grated)

– 4-5 cloves of garlic (crushed)

– 1 teaspoon cumin

– 1 bay leaf

– 1 tsp coriander powder

– 1/2 teaspoon turmeric powder

– 1 teaspoon red chilli powder

– 1 tsp garam masala

– Salt to taste

– 2 teaspoons ghee or oil

– Green coriander for garnishing

For the rice:

– 1 cup basmati rice (soaked)

– 1 bay leaf

– 2-3 cloves

– 1 inch cinnamon

– 2-3 green cardamoms

– Salt to taste

– 1 tsp ghee

Method:

1. Preparing the Rajma:

First, soak the rajma in water overnight. Then wash it well and pressure cook it for 3-4 whistles. Keep in mind that the rajma should become soft but should not melt completely.

Now heat ghee or oil in a pan. Add cumin seeds and bay leaves to it. When the cumin seeds start crackling, add finely chopped onions and fry them till they turn golden. After this, add ginger and garlic and fry them. Now add tomato paste and spices (coriander powder, turmeric powder, red chili powder) and cook well until the oil separates.

Add cooked rajma to this masala and mix well. Add water as required and let it cook on low flame for 10-15 minutes. Add garam masala and mix and add green coriander on top.

2. Making rice:

Heat ghee in a pan. Add bay leaves, cloves, cardamom and cinnamon and fry lightly. Now add soaked rice and fry lightly. After this add water and salt as per requirement. Cover the rice and cook on low flame till it is completely cooked.

How to serve:

Now your wonderful Rajma curry and Basmati rice are ready. Serve them hot on a plate. Pour some ghee on top and sprinkle lemon juice. You can serve onion and green chilli salad with it.

A different style:

The special thing about this recipe is that the spices are cooked on low flame to bring out a unique flavour. Apart from this, the use of ghee makes it even more aromatic and delicious. If you want to experiment a little, you can also add peas or vegetables to the rice.
