Material:

  • 1 cup raw vegetables (like carrots, green beans, potatoes, pumpkin, and bell peppers)
  • 1 cup coconut (grated)
  • 2-3 green chillies (according to taste)
  • 1 tsp ginger (grated)
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/4 cup yogurt (optional)
  • 2 tbsp coconut oil
  • Salt (to taste)
  • Green coriander (for garnishing)

Method of Preparation:

  1. Cut the vegetables:

    • Chop all the vegetables into equal size.
  2. Boil:

    • Boil the vegetables with salt and turmeric in a pan with some water till they become soft.
  3. Coconut Paste:

    • Put grated coconut, green chillies and ginger in a mixer and make a coarse paste.
  4. Prepare the mixture:

    • Add coconut paste to the boiled vegetables and mix well.
  5. Add the seasoning:

    • Heat coconut oil in a pan. Add mustard seeds to it. When they crackle, add to the mixture.
  6. Add yogurt (optional):

    • If you want to add curd, add it now and mix well.
  7. Decoration:

    • Garnish the avial with coriander leaves.

Serve:
