Required Materials:

– Paneer: 250 gms (cut into cubes)

– Tomatoes: 3-4 (finely chopped)

– Capsicum: 2 (cut into thin slices)

– Onion: 1 (finely chopped)

– Ginger-garlic paste: 1 tablespoon

– Green chillies: 2 (chopped)

– Kasuri methi: 1 tsp

– Garam masala: 1 tsp

– Coriander powder: 1 tsp

– Red chili powder: 1/2 tsp

– Turmeric powder: 1/2 tsp

– Cumin: 1/2 tsp

– Fresh Cream: 2 tbsp (optional)

– Oil or Ghee: 2-3 tbsp

– Salt: to taste

– Coriander leaves: for garnish

Method of Preparation:

1. Fry the paneer: Firstly, heat some oil in a pan and fry the paneer pieces till they turn light golden brown. After this, keep them aside.

2. Prepare the masala: Add some more oil in the same pan. Add cumin seeds and fry them. Then add finely chopped onions and fry till they turn light golden. After this, add ginger-garlic paste and green chillies and fry till the raw smell goes away.

3. Add tomatoes and spices: Now add finely chopped tomatoes and cook them till they become soft. Once the tomatoes melt, add coriander powder, turmeric powder, red chili powder and salt and mix well. Fry the spices till the oil separates from the sides.

4. Add bell peppers: Now add chopped bell peppers and cook for 3-4 minutes so they remain slightly crunchy.

5. Add paneer and kasuri methi: Now add fried paneer and sprinkle kasuri methi and garam masala to it. If you want a creamy texture, add fresh cream and mix well. Cook on low flame for 2-3 minutes.

6. Garnish and serve: Kadhai Paneer is ready! Garnish it with coriander leaves and serve hot with tandoori roti or naan.

Tips:

– If you want to make the dish even more special, then fry the paneer lightly and then put it in hot water for 10 minutes. This will keep it soft.

– You can also use fresh tomato puree for some freshness in the gravy.
