Recipe: Bhandarewali Potato Tomato Sabzi by Halwai
3-4 potatoes (medium size)
1 onion (chopped)
2 tomatoes (chopped)
2 green chillies (chopped)
1 inch ginger (grated)
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 tsp coriander powder
1/2 teaspoon red chili powder
Salt to taste
2-3 tbsp oil
Prepare the potatoes: Peel the potatoes, cut them into small pieces and soak them in water.
Heat the oil. Heat the oil in a pan, then add the cumin seeds and let them crackle.
Fry onions: Add chopped onions and fry until golden brown.
Add spices: Add ginger, green chilies, turmeric, coriander powder and red chili powder. Saute for a few seconds.
Add tomatoes: Add chopped tomatoes and let them cook until they become soft.
Add potatoes: Now add potato pieces and mix well. Add salt as per taste.
Add water: Add some water (if necessary) and cover the pan and let the potatoes cook on medium heat for 10-15 minutes.
Serving: After turning off the gas, garnish with green coriander and serve with hot chapati or paratha.
