Ingridents For Koftas

  • 1 medium lauki (bottle gourd), peeled and grated
  • 1 cup besan (gram flour)
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1/4 cup chopped coriander
  • Oil, for frying

Ingredients For Gravy:

  • 2 medium onions, chopped
  • 2 medium tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons tomato puree
  • 1 cup water
  • Fresh coriander, for garnish

Instructions for Cooking

Preparing the Koftas:

  • Grate the lauki and squeeze excess water from it.
  • Mix the grated lauki with besan, breadcrumbs, spices, herbs, lemon juice, and salt and make a slurry mixture.
  • Shape small cylindrical koftas out of this mixture.
  • Heat the oil in a deep frying pan and fry the koftas until golden brown.

Preparing the Gravy:

  • In a separate pan, heat oil and add cumin seeds.
  • Add chopped onions and sauté until golden brown.
  • Now, add chopped tomatoes and cook until soft.
  • Add spices, salt, and tomato puree to it.
  • Add water as per your desired consistency and simmer for 15-20 minutes.
  • Once the gravy thickens and the oil separates, add the fried koftas and let them simmer for 5-7 minutes.
  • Garnish with coriander and serve hot.
