This is a simple recipe and will take about an hour to make. Instead of eating bitter gourd regularly dry, eat it wet and pulpy by preparing it in this unique way. The ingredients used to make this curry are easily available. The spices have been used in a unique way to make this aromatic curry. Follow the steps carefully and impress everyone. You can serve it at dinner parties, lunches and birthdays also.

4 dried red chillies

salt as required

4 tbsp vegetable oil

1 cup boiled toor dal

1 tsp tamarind paste

2 tsp chana dal

2 curry leaves

water as required

4 black peppers

1/2 tsp ground turmeric

9 tbsp grated coconut

2 bitter gourd

2 tsp coriander seeds

2 tsp mustard seeds

1/2 tsp asafoetida

Step 1

To make this curry, first wash the bitter gourd thoroughly in running water. Then, peel and cut into thin pieces. Once the slicing is complete, take a medium sized pan and place it on medium flame. Then, add some oil to the pan and let it heat. Now, carefully fry the chopped bitter gourd in it until it becomes crisp. After frying, place the slices on absorbent paper and keep aside.

Next, take a small pan and place it on medium flame. Add coriander seeds, gram dal, dry red chilli, black pepper and grated coriander and fry for next 3-4 minutes. Then, take a small blending jar and add these spices into it. Grind the spices thoroughly on maximum speed.

Now, take a large sized pan and place it on medium flame. Then, add bitter gourd pieces and half a cup of water and stir for a while. Then, add salt, turmeric, prepared spice mix, tamarind paste, grated coconut, boiled toor dal and stir for next 5 minutes. Now, reduce the flame to low and let it simmer for next 10-12 minutes so that the flavors of the spices get absorbed well into the mixture. When the curry is cooked well, transfer it to a serving bowl.

Finally, place a small sized deep pan on medium flame and add some oil into it. When the oil becomes hot, add curry leaves, asafoetida and mustard seeds. Cook them until they start crackling. Garnish your curry with this mixture and then serve hot.
