They often contain spicy and fried dishes and hence Dahi Vada makes a good complement to other dishes. That is why in many places there is a trend of making Dahi Bada on Diwali. But if you are bored of making the same type of curd every time, then this time it can be made in a new way with some twist.
Dahi Bade is served garnished with chutney, curd and spices. Its taste is sour, sweet, cool and full of freshness. The probiotics present in curd are beneficial for digestion, which gives relief to the stomach after heavy food during the festive season. It is also helpful in digesting food. The spices used like roasted cumin, green chilli and coriander chutney also help in improving digestion.

1. Traditional Urad Dal Dahi Vada
Ingredients: Urad dal, salt, green chilli, ginger, asafoetida, cumin.
Method: Soak urad dal overnight and make a paste in the morning. Fry it in oil and make it big. After this, soak it in cold water and make it swell, then serve it garnished with curd, tamarind chutney, green chutney, roasted cumin and red chilli powder.
experiment: You can change the color and taste of the paste by adding ground green peas, spinach or cabbage to it.
2. Moong Dal Dahi Bade
Ingredients: Moong dal, ginger, green chilli, salt, cumin.
Method: Soak moong dal like urad dal and make a paste. Fry it in small balls. Soak them in water, squeeze them and add curd and spices.
experiment: Add grated vegetables like carrots or beetroot to moong dal to add freshness to the dish. Children also like it.
3. Bread Curd Large
Ingredients: Bread slices, curd, salt, chaat masala, roasted cumin, chutney.
Method: This is an instant method of making curd bade. Cut the bread and dip it in water and press it lightly to remove the water. Mix salt and roasted cumin in curd. Pour green and tamarind chutney on top.

Ingredients: Boiled potatoes, cornflour, salt, green chilli, ginger.

5. Paneer Curd Large
Ingredients: Paneer, gram flour, salt, spices, curd.
Method: Grate the cheese, mix it in gram flour and make big balls and fry. Then serve them with curd and chutney.
experiment: You can add finely chopped vegetables like capsicum, green onion to paneer so that its taste and color will improve.
6. Fusion Dahi Vada – Baked or Air Fried
Ingredients: Make Badi from any dal or vegetable mixture.
Method: Instead of deep frying them, bake or air fry them.
experiment: By adding various types of herbs like oregano, thyme along with spices to the elderberry paste, it can be transformed into a new fusion flavor.
