Mexican Quinoa Recipe

1/2 cup black beans
1/2 cup cucumber
salt as required
1 pinch oregano
1/2 cup frozen sweet corn
1/2 cup onion
1/4 cup coriander leaves
1 tablespoon virgin olive oil
1/2 cup water
Step 1 Chop all the vegetables and boil the quinoa and black beans
To make this delicious salad recipe, peel the onion and cucumber and chop them finely in a bowl. Next, boil the black beans in a small pan on medium flame or you can also pressure cook till 2 whistles. Then, wash the quinoa and pressure cook for 2 whistles. Once done, put all these things aside. Now, wash the corn and keep it aside!
Step 2 Fry all the vegetables
Place a pan on medium heat and add some olive oil into it. Quickly, add chopped cucumber, onion, boiled black beans and chopped coriander and sauté for a few minutes. Now, add frozen sweet corn along with boiled quinoa to this mixture and stir again. Keep stirring until the quinoa turns light brown and the vegetables are cooked properly.
Step 3 Add carom seeds and salt and serve hot
Add the Mexican quinoa, salt and oregano and mix well. Cover the pan for a minute. Transfer to a serving bowl and serve fresh and hot!
