Potato Launji Recipe

8 black peppers

1 teaspoon onion seeds

2 green chillies

2 tomatoes

water as required

2 black cardamoms

2 pinch asafoetida

3 tbsp mustard oil

1 bay leaf

1 tablespoon granulated sugar

1 pinch red chili powder

1/2 tbsp lemon juice

1 pinch turmeric

salt as required

Step 1

Add black pepper and cardamom to a blender jar and grind to make a coarse mixture. Take a non-stick pan, add oil to it and heat it on medium flame. When the oil starts bubbling, add asafoetida, bay leaves, onion seeds and coarse spice mixture. Fry for a minute or two.

Meanwhile, cut the potatoes into thin slices, chop the green chillies and tomatoes separately. Add potatoes and green chillies in the pan. Mix the ingredients well. Cook until potatoes are soft and slightly cooked. Add tomatoes along with turmeric and red chili powder.

Sprinkle salt and fry on medium flame. Add sugar and lemon juice. Fry until there is no moisture left in the sugar and then add water to it. Cover with lid and let it cook for some time.

When the gravy becomes a little thick, take it off the flame and take it out in a bowl. Garnish it with coriander leaves and serve hot with roti or paratha.
