Ingredients needed to make Annakoot vegetable
2 potatoes
2-3 brinjals
1 cauliflower
100 grams beans
100 grams radish
1 carrot
2 gourds
1 colocasia
6-7 ladyfingers
2-3 Parwal
1 capsicum
1 raw banana
1 pumpkin (small)
Annakoot Vegetable Spices
2 inches ginger
2-3 green chillies
1 cup green fenugreek (finely chopped)
3-4 tbsp oil
2-3 pinch asafoetida
1 tablespoon cumin
1 tbsp turmeric powder
2 tbsp coriander powder
3/4 tbsp red chilli powder
2 tbsp mango powder
1/2 tbsp salt or (as per taste)
Green coriander 100 grams (finely chopped)
How to make Annakoot vegetable
To make Annakoot vegetable, first of all put all the vegetables in a vessel and wash them thoroughly. When the vegetable water dries completely, chop all the vegetables thoroughly. After chopping all the vegetables, peel the gourd and banana and cut them.

Now wash it again with clean water. When all the vegetables are thoroughly dusted, leave them there for some time. Now put oil in a pan and heat it on the gas. When the oil becomes hot, add asafoetida and Add cumin seeds. When asafoetida and cumin seeds are roasted, add turmeric powder and coriander powder to it and fry it for some time.
Now add green chillies and ginger to it and fry the spices again for some time. When the spices are roasted well, add chopped vegetables to it. When the vegetables are roasted well, add salt, red chili powder, 1 cup of water, cover it with a vessel and let it cook on low flame.
When the vegetables are lightly cooked, add tomatoes, garam masala, mango powder and green coriander and turn off the gas. In this way Annakoot vegetable will be ready in a very short time.
