Recipe News Desk!!! Whenever there is a party at home, we prepare different types of food items. First of all, guests are served several delicious snacks as starters. From French fries to cutlets, there are some snacks that everyone loves. People serve many types of cutlets, from potato or paneer cutlets to vegetable cutlets. But it is seen that when cutlets are made, they do not become that crispy. Due to which cutlets do not taste so tasty. You might also be thinking of serving cutlets as snacks in your party and would want to make them even crispier. So you don't need to do much for this. If you take care of some small things then your cutlets will become very tasty and crunchy. So today in this article we are telling you about some such tips-

Material

  1. 4 medium sized potatoes boiled
  2. 1 carrot finely chopped
  3. 1/2 cup beans finely chopped
  4. 1 cup peas boiled and mashed
  5. 2 medium sized onions finely chopped
  6. 2 tablespoons finely chopped ginger, garlic and green chillies
  7. as required Finely chopped coriander
  8. 1/2 cup flour
  9. 2 teaspoon cornflour
  10. 1/2 teaspoon salt
  11. Dry spices–
  12. 1/2 teaspoon turmeric powder
  13. 1/2 teaspoon red chili powder
  14. 1 teaspoon coriander powder
  15. 1/4 teaspoon garam masala
  16. 1/2 teaspoon dry mango powder
  17. 1/4 tsp black pepper powder
  18. salt as per taste
  19. 1 cup bread crumbs
  20. As required Oil for frying cutlets

Cooking Instructions

Take 1 cup thick poha and wash it once or twice. Then cover the poha and soak it in water for 3 to 4 minutes.

Then remove all the water from the poha with the help of a strainer. Poha should be soft but not watery. Therefore, remove all the water with the help of a strainer.

Boil 1 large potato in a pressure cooker or steamer until the potatoes become soft and cooked well. Then when the potatoes are hot, peel them. Mash well with a fork or hand.

To make Poha Cutlet Mixture: ½ cup finely chopped or grated carrots, 4 to 5 French beans (finely chopped) or boiled green peas, ½ cup finely chopped onion, 1 tablespoon chopped coriander, ½ teaspoon ginger -Add garlic paste. French beans should be blanched before adding them to cutlets. If using green peas, steam the green peas with the potatoes. If the carrot is chopped then chop it finely otherwise it will be difficult to shape the cutlets. – Now add poha.

Step – 5

Now add one teaspoon turmeric powder, one teaspoon red chili powder, ½ teaspoon garam masala powder, 1/2 teaspoon dry mango powder, 1 teaspoon white sesame, a pinch of sugar (optional) and salt as per taste. Instead of dry mango powder, you can also add half teaspoon lemon juice.

Step – 6

Mix everything well. Add more salt or spices if necessary. Now shape it into small cutlets or tikkis. Heat the pan. Add 3 tbsp oil and let the oil heat. – Place the poha cutlets on the pan. When one side becomes light golden and crisp, turn them. When the other side becomes light golden and crisp, turn it again.

Step – 7

Fry them by turning them twice until they turn golden. The onions will also turn brown. Fry them on low to medium flame only. Place the fried poha cutlets on a kitchen paper towel to remove excess oil. – After this serve with green chutney and enjoy.
