Spinach Raita Recipe

Life Style: By now we all have heard of onions and tomatoes being used in spinach curries like palak paneer, but here is a new interesting spinach recipe for you to try. Palak raita is a mixture of roasted spinach, curd, onions, tomatoes and spices. This is a healthy Indian side-dish recipe. Spinach is low in fat and rich in niacin and zinc, protein, fiber, vitamins A, C, E and K, thiamine, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper and manganese. While curd is a rich source of calcium. This is a quick and easy recipe that can be prepared in less than 30 minutes. Serve this delicious and healthy palak raita with stuffed parathas or biryani. You can also try a different variation of this raita by adding boondi to it. 4 cups curd

1/2 cup chopped tomato

1/2 cup chopped onion

1 pinch black salt

2 green chillies

2 bunches spinach

salt as required

2 teaspoons roasted cumin

water as required

2 tbsp vegetable oil

Step 1

Wash and chop green chillies and spinach. Keep it aside in a bowl.

Step 2

Place a pan on medium heat, add oil. When the oil is hot, add cumin seeds and let it crackle. Then add spinach and fry for 5 minutes. Let it cool.

Take a big bowl, beat the curd in it until smooth. You can also add some water to maintain the consistency.

Now add all the ingredients and roasted spinach to the curd and mix well. Garnish with coriander leaves. You can keep the raita in the refrigerator for 5-10 minutes. Serve chilled.
