How to make Dal Makhani
To make Dal Makhani full of Punjabi flavour, first wash urad dal and rajma thoroughly in water. After this, keep both of them soaked in water overnight. In the morning, drain out the extra water from Rajma and Urad and put it in a pressure cooker. Now add 2 cups of water in the cooker and close the lid and cook till 6-7 whistles. After this, let the pressure of the cooker release on its own. Then open the lid and mash the dal with the help of a churner and keep it aside. Now add butter in a pan and heat it. – After the butter melts, add cumin seeds and let it crackle. Then add green chilli, cloves, cardamom, cinnamon and finely chopped onion and fry. When the color of onion becomes golden, add ginger-garlic paste, tomato puree, turmeric powder and red chili powder and cook. Cook the gravy until oil starts leaving. After this add mashed lentils, salt as per taste and water as required and boil for 15 minutes. After this, add fresh cream to the dal and let it cook for 2 to 3 minutes on low flame while stirring with a ladle. After this, turn off the gas and take out the dal in a serving bowl. – Now garnish the dal with green coriander leaves and fresh cream and serve hot.
