Persian Puri Recipe

1 1/2 teaspoon semolina
1 1/2 teaspoon ghee
salt as required
1/2 teaspoon cumin
3/4 cup flour
1/2 teaspoon black pepper
water as required
Refined oil as required
Step 1
To make this snack recipe, take a bowl and add flour, semolina, cumin, ghee and salt. Mix all the ingredients well using your fingers. Now, add water little by little and knead a stiff dough. Once done, cover the dough with a wet kitchen towel and keep aside for about 7-10 minutes.

Now, divide the dough into equal parts. Meanwhile, place a deep-bottomed pan on medium flame and heat refined oil in it. Then, sprinkle some oil on a flat surface and roll each portion into a pancake shape. Put 2 black peppercorns on the rolled puri and prick it all around with a fork. Repeat the same steps with the remaining parts.

When the oil is hot enough to fry, reduce the flame to low. Now, put the rolled puris in hot oil and fry them until they turn golden brown on both sides. To remove excess oil, take out the puris on a plate lined with absorbent paper. Let them cool completely and store them in an air-tight container. Delicious and crispy Persian Puris are ready to eat.
