Mix Vegetable Paratha Recipe
Life Style: Mix Vegetable Paratha is a North Indian recipe that you can have for breakfast or brunch with your loved ones. Made with mixed vegetables and grains, this recipe is very easy to make, which is healthy as well as nutritious! It can be eaten with butter, curd, pickle, chutney or any curry of your choice. 1/2 cup chopped cabbage
2 tbsp finely chopped green onions
1/2 teaspoon ginger
1/2 teaspoon ground turmeric
1 tablespoon finely chopped coriander leaves
1/4 tsp garam masala powder
1/2 teaspoon red chili powder
salt as per taste
1/4 cup chopped carrots
1/2 cup finely chopped capsicum (green chilli)
2 tbsp finely chopped fenugreek (methi)
1/2 teaspoon garlic
1/4 cup boiled, mashed peas
1 chopped green chilli
1 teaspoon coriander powder
1 teaspoon refined oil
Step 1 Prepare the Filling
Heat 1 teaspoon oil in a non-stick pan. Add carrots, cabbage, capsicum, green onion, fenugreek leaves, crushed ginger and garlic. Sprinkle salt and turmeric powder over it and fry on medium flame for 3 to 4 minutes or until the vegetables become soft. Add boiled and mashed green peas to the mixture. Mix well and turn off the flame. Let the mixture cool.
Step 2 Prepare the Dough
Take 1 cup wheat flour, 1 teaspoon oil and salt in a bowl. Add vegetable mixture, chopped coriander, chopped green chillies, red chilli powder, garam masala powder and coriander powder. Mix them well. Add water little by little and knead until smooth. Apply some oil on its surface, cover and keep it for 10 minutes.
Step 3 Roll the Parathas
After 10 minutes, divide the dough into 8 equal parts and make small balls. Take 1/2 cup dry wheat flour in a plate. Take a ball, flatten it like a patty and sprinkle dry wheat flour on it. Roll out the paratha.
Step 4 Cook the Paratha
Place it on a hot pan and cook on medium flame. When small bubbles start rising on the surface, turn it over and reduce the flame. Apply 1 teaspoon oil on the edges and spread on the paratha. Flip it again and apply 1/4 teaspoon oil on it.
Step 5 Make more parathas like this
Press it with a spatula and let it cook on medium flame. Cook until golden brown on both sides. Follow the same process for the remaining dough balls and your delicious and nutritious meal is ready.
Step 6 Ready to serve
Serve hot with side dishes of your choice like butter, curd, chutney or curry.
