Egg Biryani
Ingredients: • Basmati rice: 2 cups • Boiled eggs: 6 • Bay leaves: 1 • Cardamom: 2 • Cloves: 2 • Green chilli cut from the middle: 1 • Whole black pepper: 1/4 teaspoon • Finely chopped onion: 2 • Chopped tomatoes: 3 • Grated ginger: 1 piece • Turmeric: 1/2 tsp • Red chilli powder: 1/2 tsp • Cumin powder: 1/2 tsp • Coriander powder: 1/2 tsp • Garam masala powder: 1 tsp • Coconut milk: 2 cups • Water: 1 1/2 cups • Salt: as per taste • Ghee: 5 spoons • Finely chopped coriander leaves: 1/2 cup • Finely chopped mint leaves: 1/2 cup

Method: Peel the peel of boiled eggs. Heat the cooker. Add ghee in it and then add cardamom, cloves, bay leaves and black pepper etc. After a few seconds, add onion, ginger and garlic to the pan. Fry on medium flame until onion turns golden. When the color of onion changes, add turmeric powder and red chili powder to the cooker and fry for a few seconds. After this, add tomato in the cooker and cook it until it becomes soft. When the tomatoes melt well, add cumin powder, coriander powder and salt to the cooker and fry the spices well. When ghee starts separating from the spices, add garam masala and coconut milk to the cooker and mix well. Make a slight cut in the boiled egg with a knife and put it in the cooker. Lower the flame and cook the gravy for 15 minutes. Adjust salt and spices. Wash the rice thoroughly. Add rice to the cooker along with coriander and mint and mix. Close the cooker and turn off the gas after three whistles. Let the pressure of the cooker release on its own. Mix egg biryani gently and serve with favorite raita.
