Ingredients to make Modur Pulao

1 cup basmati rice

Ghee as required

1/2 inch cinnamon

3-4 cloves

2 bay leaves

4 cardamoms

4-5 whole black peppers

a pinch of saffron

5-10 almonds (cut into thick pieces)

5-10 tbsp cashews (cut into thick pieces)

15-20 raisins

1 cup sugar

water as required

Method

To make Pulao, first wash the Basmati rice thoroughly and soak it in water for half an hour.

Soak saffron in 2 tablespoons water.

Now pour 2-3 cups of water in a pan and boil it. When the water boils, add rice in it and cook.

Cook only 3/4th of the rice in the pan. When the rice is cooked, drain the water and keep it aside.

Now heat ghee in a pan and add cloves, cardamom, black pepper, cinnamon and bay leaf and fry.

When the masala dissolves, dissolve sugar in half a cup of water, mix it with the masala and cook until it thickens.

Now add half cooked rice in it and cover and cook, if water is less for rice then add more water.

When the rice is cooked, turn off the flame and keep it aside and heat 2-3 tablespoons of ghee in a pan.

Now fry dry fruits in ghee and add cooked rice to it and mix.

Add soaked saffron to the rice, mix and serve hot.
