Bharwa Tori Recipe

Material

  • 5 zucchini, peeled
  • 1 cup grated coconut
  • Half cup roasted and coarsely ground peanuts
  • ½ cup sesame seeds, roasted and ground
  • 1 teaspoon cumin
  • 2 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon ginger-garlic paste
  • salt as per taste
  • 2 teaspoons tamarind paste
  • ½ cup finely chopped fresh coriander leaves, chopped
  • 2 cups oil

method of making

  • To make stuffed ridge gourd, first peel the ridge gourd and wash it with water.
  • Then with the help of a knife, cut it into medium sized pieces and make a slit in all the ridge gourds.
  • Now heat a pan on gas. Then add peanuts and sesame seeds and fry well.
  • Then let it cool. Now put it in a mixer and prepare a coarse powder.
  • Now add grated coconut, ground peanuts, cumin, turmeric powder, coriander powder, salt, red chilli powder, ground sesame seeds and ginger-garlic paste in a mixing bowl and mix well.
  • After this, put this stuffing in the middle of ridge gourd and fill it well. By doing this, fill all the ridge gourds with this stuffing.
  • Now heat a pan on gas. Then add oil into it.
  • When the oil becomes hot, put the filled tarai in it and fry it well on low flame for 25-30 minutes by turning it every now and then.
  • When the ridge gourd is cooked well, turn off the gas. Stuffed ridge gourd is ready
  • You can serve it hot with roti, parantha or rice and dal.
