South Indian Upma: Actually, the true meaning of South Indian taste is delicious upma made with curry leaves! The taste of traditional South Indian upma, in which the addition of curry leaves adds a new taste and aroma to every bite. A breakfast that not only satisfies the stomach but also the mind. Rava (semolina) – 1 cup

Water – 2 cups

Oil – 2 tbsp

Ghee – 1 tablespoon (to taste)

Mustard seeds – 1 tsp

Urad dal – 1 tsp

Chana dal – 1 tsp

Asafoetida – a pinch

Curry leaves – 10-12 (this is the special ingredient which will give rich taste to the upma)

Green chilli – 2-3 finely chopped

Ginger – 1 inch piece (grated)

Turmeric powder – 1/4 tsp

Lemon juice – 1 tablespoon

salt to taste

Chopped coriander – 1 tablespoon (for garnishing)

Put 1 cup rava in a pan and fry it on medium flame till it turns golden. When the rava starts giving out aroma, take it out in a plate and keep it aside.

Add oil and ghee in the same pan. As soon as the oil is hot, add mustard seeds into it. When the mustard seeds start spluttering, add urad dal, chana dal and fry a little.

Now add asafoetida, curry leaves, green chillies and grated ginger. Fry them for a few seconds, so that the spices start giving off aroma.

Now add 2 cups of water and turmeric powder into it. Let the water cook until it boils.

When the water boils, add rava slowly and keep stirring continuously so that lumps do not form. Keep in mind that the ratio of water and rava is correct.

Now add lemon juice to the prepared upma and sprinkle chopped coriander. Your South Indian style upma is ready, serve it hot. If you want, you can also eat it with coconut chutney or sambar.

Curry leaves give a special, delectable taste and aroma to the upma. Try to use fresh curry leaves if you want to eat the traditional style of upma.

If you wish, you can also add ground chillies and spices, but traditionally its real taste is hidden in keeping the spices mild.
