A delicious and easy recipe
New Delhi: It is impossible to talk about Indian kitchen and not include brinjal bharta. This dish wins everyone's heart due to its special spices and smoky taste. Whether you eat it with roti or rice, it gives a different experience every time. Today we will tell you a special recipe for making brinjal bharta which will bring applause on your dinner table.
Material
- Brinjal (large) – 2
- Tomato – 2 (finely chopped)
- Onion – 2 (finely chopped)
- Garlic – 4-5 cloves (crushed)
- Green chilli – 2 (chopped)
- Coriander leaves – few (finely chopped)
- Red chilli powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Garam masala – 1/2 teaspoon
- Mustard oil – 2 teaspoons
- Salt – as per taste
Method of preparation
1. Roasting Eggplant:
First of all, wash and dry the brinjal. Apply a little oil to the brinjal and fry it on gas flame from all sides. Fry it until the brinjal becomes completely soft. Cool the roasted brinjal, peel it and take out the pulp.
2. Preparing spices:
Heat mustard oil in a pan. Add garlic and green chillies and fry till it becomes light golden. Now add onion to it and cook until it turns pink. Then add chopped tomatoes and add turmeric, red chilli powder and salt and fry the spices well.
3. Mixing Eggplant and Spices:
Add the roasted brinjal pulp to the spices and mix well. Let it cook on low flame for 5-7 minutes. Finally add garam masala and coriander leaves and mix.
4. Serve:
Hot brinjal bharta is ready. Serve it with fresh roti, paratha or rice and enjoy its amazing taste.
Tips:
- While roasting brinjal, stick some garlic cloves on it, this will further enhance the taste.
- If you like the taste of smoke, then after cooking the roasted brinjal, you can make it more delicious by giving it charcoal smoke.
