To make this vegetable, you need potatoes, carrots, peas, tomatoes, onions, green chillies, green coriander, cumin seeds, salt, turmeric powder, red chilli powder, coriander powder, garam masala, vegetable masala, dry mango masala and oil.

To make this vegetable, first wash the potatoes and carrots thoroughly. Then peel both the things and cut them into small pieces. Along with this, peel the peas also and take out its seeds and keep them aside. Now boil peas in water in a vessel. On the other hand, heat oil in a pan and then fry the potatoes in it thoroughly until they become golden brown. Then take out the potatoes and keep them aside and also roast the carrots. After roasting well, take out the carrots also. Now if there is excess oil in the pan, take it out and if it is less, add some more. To make this vegetable you will need 2 tablespoons of oil. Add cumin seeds in this hot oil and then add onion and fry it lightly. After the onion is lightly roasted, add tomatoes and fry it lightly. Then add salt, turmeric powder, red chili powder, coriander powder to it. After mixing well, add fried potatoes, carrots and boiled peas to it. Mix well. Now let the vegetables roast for some time. Then add chopped green chillies, garam masala, vegetable masala, dry mango masala. After mixing well, garnish with green coriander leaves and serve with paratha.
