To make mixed veg, first take a pan and heat oil in it. When the oil becomes hot, add cumin seeds and fry it. When cumin starts crackling, add chopped onion and green chilli and fry. When the onion starts turning golden, add cauliflower, beans, capsicum, carrots, potatoes and peas. Now mix it well with the help of a big spoon and fry for about 5 minutes.
When the mixed veg gets roasted a little, add chopped pieces of paneer to it and mix everything well once again. Let the vegetable cook again for about five minutes. When the cheese water dries up, mix tomatoes in the vegetable.
After some time, when the tomatoes become soft, add red chilli, coriander powder, turmeric and ginger to the vegetable and mix it well. Now fry the vegetables again for three to four minutes and add some water to it and cover it. While the vegetable is cooking, remove the lid from time to time and keep stirring it.
This will prevent the vegetables from sticking to the pan. When the vegetables are cooked well, add garam masala to it and mix well in the mix veg. Now turn off the gas flame. In this way your delicious mixed veg is ready. Before serving it, garnish with green coriander leaves. It can be eaten with roti, naan or paratha. You can add your favorite vegetables in place of these vegetables.
