Ingredients for making carrot barfi
Carrot – 1/2 kg
Mawa – 1 cup
Cashew powder – 1/2 cup
Milk – 1 cup
Cashews – 8-10
Pistachios – 8-10
Cardamom – 4-5
Desi ghee – 2 tbsp
Sugar – 1 cup
How to make carrot barfi
To make carrot barfi, first wash the carrots and wipe them thoroughly. After this, grate the carrots and keep them aside. Now pour milk in a deep bottomed vessel and let it heat on medium flame. When the milk starts boiling, add grated carrots to it and mix while stirring with a ladle. Now cook it for 3-4 minutes.
Now cut cashews and pistachios into fine pieces and peel the cardamom and grind it coarsely. Now put mawa in a vessel and mash it well. At the same time, when the milk dries well in the carrot, add 2 tablespoons of desi ghee in it and mix it. Now cook it for 3-4 minutes while stirring with a spoon. After the carrots are roasted well in desi ghee, add sugar to it and mix.
Cook the carrot while stirring until its juice runs out. After this, add mashed mawa to the roasted carrots, mix it and fry it for some time while stirring. When the mixture becomes dry well, add cashew powder, cashew pieces and cardamom powder and mix well. After this, apply ghee on a plate/tray and grease it properly.
Pour the prepared barfi mixture into a plate/tray and spread it all around and keep it aside for some time to set. Garnish it with chopped pistachios. When the barfi is set, cut it into desired shapes with the help of a knife. Your delicious carrot barfi is ready. Now serve it and enjoy eating.
