Ingredients to make Ginger Chutney
Ginger – 100 grams
Garlic – 2 tbsp
Chana dal – 1 tablespoon
Urad dal – 1 tablespoon
Fenugreek seeds – 1/4 tsp
Cumin – 1 tsp
Tamarind – 50 grams
Jaggery – 100 grams
Dry red chilli – 25-30
Coriander seeds – 1 tbsp
Oil – 2-3 tbsp
Salt – as per taste
Water – half cup
for tempering
Chana dal – 1/2 tsp
Urad dal – 1/2 tsp
Mustard – 1 tsp
Asafoetida – 1 pinch
Chopped curry leaves – 1 tablespoon
Dry red chilli – 2-3
Oil – 2 tbsp
How to make Ginger Chutney
To make South Indian style ginger chutney, first wash the ginger with clean water. After this, cut the ginger into small pieces. Now add 2-3 spoons of oil in a pan and heat it. When the oil becomes hot, add ginger pieces to it and fry for 2 minutes. Ginger has to be roasted until its color starts changing. After this, add chopped garlic to it and fry it along with ginger. When both the things are roasted, take them out in a bowl.
Now add some more oil in the pan. Add chana dal, urad dal, whole coriander, cumin and fenugreek seeds and fry. Fry them until the spices start giving out aroma. Add dry red chilli to it and fry on low flame. After this, turn off the gas and put all the ingredients in the mixer jar and grind all the spices without adding water.
After grinding the spices, open the mixer jar and add roasted ginger and garlic into it. After this, grind all the ingredients again and prepare a thick paste. Now soak the tamarind in water (soak it in a quarter cup of hot water for half an hour), put it in a mixer jar and add jaggery and salt as per taste and grind it until a smooth paste is prepared. Add water as required in the chutney and after the chutney is ready, take it out in a big bowl.
Now to prepare tadka, heat 2 tbsp oil in a pan. Add mustard seeds, gram dal, urad dal, 2-3 dry red chillies, curry leaves and a pinch of asafoetida and fry. When the masala starts crackling, turn off the gas and spread the prepared tadka in the chutney bowl. Delicious ginger chutney full of taste and nutrition is ready.
