Material :
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 inch ginger, grated
- 2 large tomatoes, chopped
- 1 cup pumpkin, cut into cubes
- 4 cups water
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- salt as per taste
- 1/2 cup cream (optional)
- Fresh coriander leaves, finely chopped (for garnish)
Method :
- Heat some oil in a pan. Add onion, garlic and ginger and fry until golden.
- Now add tomato and pumpkin and mix well.
- Add turmeric powder, red chilli powder, coriander powder and salt and mix well.
- Add 4 cups of water in it and let it boil.
- Cook on low flame until the pumpkin becomes soft and the entire mixture thickens.
- Let the cooked mixture cool and then grind it in a mixer.
- If you want, add cream to it and mix well.
- While serving hot soup, garnish with fresh coriander leaves.
