  • 3 tomatoes
  • 10 to 12 cashews
  • 1 teaspoon melon seeds (soaked)
  • 1/2 poppy seeds
  • 1 inch ginger
  • 2 spoons fresh curd
  • 1 teaspoon red chili powder
  • salt as per taste
  • ½ cup grated cheese)
  • 2 teaspoons fresh coriander leaves (finely chopped)
  • 2 spoons gram flour (roasted)
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • oil as required
  • 1 pinch celery
  • Corn flour (for coating)
  • Green cardamom powder (a pinch)
  • 1/4 fresh cream

method of making

  • To make Methi Malai Kofta, first put a pressure cooker on the gas.
  • After this add chopped tomatoes, soaked cashew nuts, melon seeds and poppy seeds.
  • Then add ginger, curd, red chilli, salt. Also add about half a glass of water in it and mix well.
  • After this, close the lid of the cooker and cook well till about 2 to 3 whistles.
  • Then take it out in a bowl. After this add finely chopped fenugreek leaves, cheese, coriander leaves, roasted gram flour.
  • Also add red chili powder, turmeric powder, coriander powder, cumin powder, salt, celery. Then add one spoon oil in it.
  • After this, add about half a cup of water to all these things and then knead it well with hands like dough.
  • Then apply oil on your hands and make small balls of this dough.
  • After this, coat it in corn flour, just like you coat roti.
  • After this, put these balls in hot oil and fry them well. After this, fry well until it becomes brown and crispy.
  • Then when the cooker whistles, open the lid. On the other hand, blend the gravy well with the help of a hand blender or mixer to make a paste.
  • After this, filter it with the help of a filter. Now heat a pan and mix this gravy in it.
  • Then add a pinch of cardamom powder to it. Also mix fresh cream or malai.
  • After this, cook it well for two to three minutes. Now your gravy is ready.
