Baked Fish Burger Recipe

Life Style: 4 frozen cod fillets, defrosted

3 tbsp plain flour

1 egg

75 grams panko breadcrumbs

sunflower oil spray

1 Little Gem lettuce, leaves separated

1 tomato, chopped

2 tbsp light mayonnaise

4 soft white rolls, cut in half

Preheat the oven on Gas 6, 200°C, Fan 180°C.

Trim the thin ends of any long fish fillets to create a rough square shape for each fish burger. Keep aside.

Transfer the flour to a plate and season with freshly ground black pepper. Beat the eggs and put them in a bowl. Place the breadcrumbs on another plate.

First, coat the fish pieces in flour, then dip in beaten egg on both sides (always wash your hands after handling raw eggs), then finally in breadcrumbs. If you have 3 willing little helpers, you can each give them their own space!

Lightly spray a baking tray and both sides of each fish fillet with oil spray. Place them on a tray and bake in the oven for 15-20 minutes, until the fish is cooked through and the breadcrumbs are golden.

Divide the lettuce leaves evenly among the rolls, then load each with a fish burger. Add tomato slices, add a dollop of mayonnaise on top and cover the roll with a lid.
