Ingredients required to make Spinach Pulao:

– Basmati rice – 1 cup (soaked for 30 minutes)
– Spinach – 2 cups (finely chopped or pureed)
– Onion – 1 big (finely chopped)
– Green chilli – 2 (chopped)
– Ginger-garlic paste – 1 tsp
– Tomato – 1 medium (finely chopped)
– Cumin – 1 tsp
– Bay leaf – 1
– Cinnamon – 1 inch piece
– Cloves – 2-3
– Turmeric powder – 1/4 tsp
– Garam masala – 1/2 tsp
Oil or ghee – 2 tbsp
– Salt – as per taste
– Water – 2 cups

How to make Spinach Pulao

1. Prepare Spinach:
– Wash spinach and chop it finely.
– If you want, you can make a paste by lightly boiling (blanching) the spinach.

2. Prepare the masala:
1. Heat oil or ghee in a pan or pressure cooker.
2. Add cumin, bay leaves, cinnamon, and cloves and sauté.
3. Add onion and fry until golden.
4. Add ginger-garlic paste and green chillies, and cook for 1-2 minutes.
5. Add tomatoes and spices (turmeric, garam masala) and fry until the spices leave the oil.

3. Mix Spinach and Rice:
1. Now add spinach (chopped or pureed) and cook for 2-3 minutes.
2. Add soaked rice and mix gently.

4. Cook:
1. Add water and salt.
2. If making in pressure cooker, cook till 1 whistle.
– If making it in a pan, cover the rice and cook it on low flame for 10-12 minutes.

5. Serve:
– Spinach Pulao is ready. Serve it with curd, raita, or papad.
