  1. Prepare the tomatoes: Slice the tomatoes in half and cook them in a little mustard oil until softened. The mustard oil gives the chutney its unique flavour.
  2. Add garlic: Toss in garlic cloves and sauté them with the tomatoes until they turn golden and aromatic.
  3. Peel the tomatoes: Once cooked, allow the tomatoes to cool slightly and remove their skin for a smoother chutney.
  4. Blend the ingredients: Using a chopper, sil-batta (grinding stone), or a food processor, combine the roasted tomatoes and garlic with chopped radish and radish leaves, onion, green chillies, and fresh coriander leaves.
  5. Achieve the perfect consistency: Grind or mash the mixture until it reaches your desired consistency—chunky or smooth, it’s up to you!
  6. Season and finish: Add salt, red chilli powder, and a generous squeeze of lemon juice. Mix well and taste to adjust seasoning if necessary.
