1 teaspoon coriander leaves
4 teaspoon lemon juice
500 grams salmon fish
2 avocados
1 onion
1 handful mint leaves
2 sticks butter
as needed Freshly ground black pepper
1 teaspoon virgin olive oil
2 ripe mangoes
2 medium sized tomatoes
1 teaspoon chili flakes
coarse sea salt as needed
1 tsp garlic paste Step 1 Marinate and grill the fish
Wash the salmon (fillets are used in this recipe). Mix the lemon juice, garlic, salt and pepper and rub thoroughly over the fish. Let it marinate for 2-3 hours. Take a grill pan and apply butter on it and grease it well. When it is hot, add the salmon fillets. Apply some butter on the edges so that they do not stick to the bottom. Turn them over. You can also grill them in the oven for 10 minutes at 180 degrees.
Step 2 Chop the vegetables and mango
Meanwhile, take a chopping board and finely chop the avocado, mango and tomato. Make sure you are using firm fruits and vegetables for this recipe. Cut the onion also in the same size. Put everything in a bowl.
Step 3 Mix the Salsa
Add salt, pepper, lemon juice and chili flakes to the mango-avocado-tomato-onion mixture. Adding a teaspoon of olive oil is optional. Mix well. Finely chop the coriander and mint leaves and add to the salsa. Toss.
Step 4 Serve
Place the grilled salmon on a plate, add salsa on the side and serve hot. You can garnish with dill leaves (optional)
