Podi Masala Dosa Ingredients:

  • 2 tbsp sesame seeds (til)
  • 1 tsp oil
  • ¼ cup urad dal
  • ¼ cup chana dal
  • 6 dried red chillies
  • A few curry leaves
  • 2 tbsp dry coconut (kopra), sliced
  • A small ball-sized piece of tamarind
  • ¼ tsp turmeric
  • A pinch of hing (asafoetida)
  • 1 tsp salt

How to Make Podi Masala Dosa

1. Making the Podi Masala:

  • In a large tawa, dry roast 2 tablespoons of sesame seeds on a low flame.
  • Transfer the roasted seeds to a blender and set aside.
  • In the same tawa, heat 1 teaspoon of oil and add ¼ cup of urad dal and ¼ cup of chana dal.
  • Next, add 6 dried red chillies and a few curry leaves, roasting them on a low flame.
  • Now add 2 tablespoons of dry coconut and roast until the coconut turns golden.
  • Let the mixture cool completely, then transfer it to a blender (mixi).
  • Add a small ball-sized piece of tamarind, ¼ teaspoon of turmeric, a pinch of hing, and 1 teaspoon of salt.
  • Blend the ingredients into a coarse powder without adding water.
  • Your dosa podi is now ready. Store it in an airtight container for later use or apply it immediately to your dosas.

2. Making the Podi Masala Dosa:

  • To prepare the dosa, pour a ladleful of dosa batter onto a heated tawa.
  • Cover and cook the dosa for 1 minute or until it is partially cooked.
  • Once partially cooked, sprinkle the prepared podi evenly over the dosa.
  • Spread 1–2 teaspoons of ghee uniformly over the dosa.
  • Cover and allow it to simmer for 30 seconds or until the dosa is fully cooked.
  • Finally, enjoy your podi masala dosa with chutney and sambar!
