Material

  • Basmati rice – 1 cup
  • Green capsicum – 1 (finely chopped)
  • Carrot – 1 (grated)
  • Onion – 1 (finely chopped)
  • Tomato – 1 (finely chopped)
  • Green peas – 1/2 cup
  • Cumin – 1 tsp
  • Cloves, cardamom, cinnamon – 2-3 (as per taste)
  • Turmeric powder – 1/2 tsp
  • Chilli powder – 1/2 tsp
  • Garam masala – 1/2 tsp
  • salt to taste
  • Oil – 2 tbsp
  • Mint leaves – a few (for garnish)
  • Water – 2 cups

for color

  • * White (cream or coconut)
  • * Coconut milk – 2-3 tbsp or cream (grated coconut)
  • *For green:
  • * Spinach – 1 cup (blanched and pureed)
  • * Saffron (orange):
  • * Saffron – few threads (soaked in hot water)

Recipe (Tiranga Pulao Recipe)

1-First of all, wash the rice and soak it for 15-20 minutes. Then add water and salt in a pan and boil. While boiling, cook the rice 80% and filter it.

2- Boil spinach leaves and make puree. To prepare orange colored mixture, soak saffron in water and prepare its extract.

3-Now heat some oil in a pan, then add cumin and whole spices in it. After this, add onion, tomato, and peas and fry. Then add turmeric, chilli powder and garam masala to it. Now add rice to it and mix well. 4- Then divide the rice into different parts. Add coconut milk (white colour) in one part, spinach puree (green colour) in the second and saffron water (saffron colour) in the third. Mix well. Now cover it in the pan and let it cook on low flame for 10-15 minutes so that the color gets absorbed into the rice properly. Garnish the prepared tri color pulao with mint leaves.
