Veg Nargisi Kofta This dish is the pride of party functions
� Ingredients
for kofta
Paneer – 250 grams
Soya Vadi – 1 cup
Corn flour – 4 tbsp
Flour – 4 tbsp
Turmeric – 1/4 tsp
Red chilli powder – 1/4 tsp
Cashew – 1 tablespoon
Raisins – 1 tablespoon
Ground black pepper – 1/4 tsp
Oil – for frying
Salt – as per taste
for gravy
Tomato – 3-4
Melon seeds – 2 tbsp
Coriander powder – one and a half teaspoon
Turmeric – 1/2 tsp
Kasuri Methi – 1 tablespoon
Green chilli – 1-2
Ginger – 1/2 inch piece
Cashew nuts – 8-10
Cumin – 1/4 tsp
Cloves – 2-3
Large cardamom – 1
Bay leaves – 2
Cinnamon – 1 inch piece
Black pepper – 1/2 tsp
Butter – 1 tablespoon
Garam masala – 1/4 tsp
Green coriander leaves – 2-3 tbsp
Salt – as per taste
�विधि (Recipe)
– First of all grate the cheese. Now take out 50 grams of paneer and put it in a bowl and add turmeric, red chilli and salt to it and mix it.
– After this add 1 tablespoon chopped raisins and cashew nuts and mix. Now the stuffing for kofta is ready.
Now take the remaining grated cheese and put it in a mixing bowl. Add corn flour and salt and mix everything.
– Prepare the dough by adding water little by little and break it into small pieces to make koftas. After this, make small balls from the prepared stuffing.
Now take a little mixture of paneer dough in your hands, round it and give it the shape of a bowl. After this, place the ball of stuffing in it and close it well.
– Give it an oval shape and keep it aside in a plate. Similarly, make koftas from all the dough and stuffing.
After this, put flour in a bowl and prepare a thin solution by adding water to it. After this, put the koftas in this solution one by one and take them out and keep them like this for 15 minutes.
– Now put oil in a pan and heat it. When the oil is hot, put the flour coated koftas in it and deep fry them.
– Fry them till they turn light brown and then take them out in a plate. Similarly, fry all the koftas. Do not fry the koftas on low flame otherwise the cheese may melt and come out.
– Keep the prepared koftas aside in a plate. Now start the process of making gravy. For this, put 2-3 tablespoons of oil in a pan and heat it.
– After the oil is heated, add all the dry spices including bay leaves, cloves, black pepper, cinnamon and fry.
When the spices are roasted well, add chopped tomatoes, green chillies and ginger paste and mix. Cook the mixture until the tomatoes become soft.
When tomatoes become soft, mix red chilli and salt in the gravy. Fry it until the gravy starts leaving oil.
– Keep stirring occasionally while cooking the gravy. After this, make a paste of cashew nuts and melon seeds. Add the paste to the spices and fry until the oil separates.
When all these ingredients are roasted well, add one tablespoon butter, one and a half cup water, garam masala and green coriander leaves and mix well and cook.
After this, cover the gravy and let it cook for 5 minutes. During this time keep the flame low. In this way the gravy will be ready.
Now add the previously prepared koftas to the prepared gravy and mix it well with the gravy. Serve Veg Nargisi Kofta hot with roti, naan or paratha.
