Stuffed Green Eggplant Recipe

Winter is the season when green brinjals are available in abundance and that too at affordable prices. Make this easy recipe of Green Eggplant Stuffed with Curry Masala in no time. This vegetarian recipe is very easy to make and tastes delicious too.

250 g washed and dried, cored and chopped long brinjals

30 grams roasted urad dal

5 grams roasted cumin

1/4 teaspoon roasted fenugreek seeds

4 spoons refined oil

2 pinches of salt

30 grams roasted chana dal

10 grams roasted coriander seeds

8 roasted red peppers Step 1

First of all, prepare the curry masala by roasting all the ingredients. When you smell the roasted dal, turn off the gas and let the mixture cool. Grind the mixture as fine or coarse as you like.

Meanwhile, wash the brinjals and make slits in each brinjal – first make a straight slit on one side and another straight slit on the other side, so that the brinjals have space to stuff the masala.

Now add salt as per taste to the spices and mix well. Stuff the masala between the incisions in the brinjal.

Place a pan on medium flame and heat oil in it, and when the oil is hot enough, put the stuffed brinjals in the pan.

Sprinkle remaining spices on top and sides. Place a lid on the pan.

Step 6

Let the brinjal cook until it becomes soft. There is no need to add water to the pan. After 5 minutes, simply turn each brinjal and put the lid back on and let it cook further.

Step 7

When the brinjal turns brown in color, it is ready to serve. The vegetable can be served with rice or roti.
