Ingredients to make Panchmel Dal:

For dal:
– Toor Dal (Arhar Dal) – 2 tbsp
Moong dal – 2 tbsp
– Chana dal – 2 tbsp
– Masoor dal – 2 tbsp
– Urad dal – 2 tbsp
– Water – 4 cups (for cooking dal)

Spices:
– Turmeric powder – 1/2 tsp
– Red chilli powder – 1/2 tsp
– Coriander powder – 1 tsp
– Garam masala – 1/2 tsp
– Asafoetida – 1 pinch
– Cumin – 1/2 tsp
– Ginger – 1/2 tsp (grated)
– Green chilli – 1-2 (finely chopped)
– Tomato – 2 (finely chopped)
– Ghee or oil – 2 tbsp
– Salt – as per taste

For garnish:
– Fresh coriander leaves – 2 tbsp (chopped)
– Lemon juice – 1 tsp (optional)

How to make Panchmel Dal

1. Cook the lentils:
1. Wash all the pulses thoroughly and soak them for 20-30 minutes.
2. Add pulses, turmeric powder, salt and 4 cups water in a pressure cooker.
3. Cook on medium flame till 3-4 whistles.

2. Prepare tadka:
1. Heat ghee or oil in a pan.
2. Add cumin and asafoetida in it.
3. Add ginger and green chilli and fry lightly.
4. Add chopped tomatoes and add spices (red chilli powder, coriander powder, garam masala).
5. Fry the spices until the tomatoes become soft and release oil.

3. Mix dal and tadka:
1. Add cooked dal to the tempering and mix well.
2. Add water as required and let it cook on low flame for 5-7 minutes.

4. Garnish:
1. Garnish the dal with fresh coriander leaves.
2. Before serving, sprinkle lemon juice on top.
