Material:
- Rice Flour – 2 cups
- All-purpose Flour – 1/2 cup
- Coconut milk – 1 cup
- Yeast – 1/2 teaspoon
- Sugar – 1/2 teaspoon
- salt to taste
- Water – as per need
- Oil – for cooking
- Egg (if making with egg) – 1
Method of preparation:
Preparing the solution:
- Add rice flour, all-purpose flour, yeast, and sugar to a bowl.
- Prepare a smooth and thin batter by gradually adding coconut milk and water.
- Add salt, mix well and cover the solution and keep it for 4-5 hours, so that the yeast swells well and the solution ferments.
Preparing Hoppers:
- Put some oil in a hopper pan (or plain kadhai) and heat it.
- Pour 1/4 cup of the batter into the pan and swirl the pan to spread the batter around, leaving a thick edge and a small depression in the center.
- Now cover the lid and let it cook for 2-3 minutes. The edges will be crisp and the center will be soft.
If making with eggs:
- When the hoppers are half cooked, add an egg in the middle and cover the lid again and let it cook. When the egg is lightly cooked, the hoppers are ready.
Serving:
- Serve the hoppers with hot coconut chutney, Sri Lankan curry or any sweet sauce. It can be served as breakfast or brunch.

- You can make hoppers in different ways – if you have a sweet tooth then you can make sweet hoppers with sugar and coconut milk.
- It can also be eaten with eggs, spicy curry, or dal.
