What are the materials:

500 grams bitter gourd
1/2 cup mustard oil
4 teaspoons mustard or yellow mustard
2 teaspoons cumin seeds
2 teaspoons fenugreek seeds
1/4 teaspoon asafetida powder
1 teaspoon parsley
3 teaspoons salt
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon garam masala
1/2 teaspoon fennel powder
1/4 teaspoon black salt (optional)

Know the recipe of bitter gourd pickle

1- First wash the bitter gourd and clean it thoroughly. Cut both ends and throw it away. Now cut the bitter gourd into long or small pieces as per your choice.
2- Some people boil them for a while to reduce bitter gourd bitterness. If you want, you can boil the bitter gourd and boil it in water for 5-7 minutes and then wash the water with cold water.
3- Heat mustard oil in a pan. Add mustard seeds, cumin, fenugreek seeds and asafetida and add tempering. Now add turmeric powder, red chili powder, garam masala and fennel powder and fry for 30 seconds.
4-Add chopped bitter gourd in the embodiment and add salt and mix well. Fry continuously for 5-7 minutes on medium flame. The bitter gourd should be slightly soft.
Turn off 5-Gas and allow the pan to cool. When cooled, add black salt (if used) to it.
6-Then fill the pickle in a clean and dried glass jar and close the jar thoroughly. Store the pickle at room temperature or in a refrigerator.

Keep these things in mind

Apart from mustard oil, you can also use peanut oil or sunflower oil.
– You can also add other spices like coriander powder, celery etc. as per your choice.
After cutting the bitter gourd, sprinkle salt and keep it for 15-20 minutes. This will reduce bitterness.
– If you like a little sweetness, you can also add a little jaggery or sugar to the pickle.
