Method

- First of all, mix gram flour, semolina, curd, turmeric, ginger-chilli paste, salt and sugar in a bowl. Prepare a smooth, flowing batter by adding water.

- Add chopped fenugreek leaves and some oil to it and mix well. Keep the batter covered for 10-15 minutes.

- Heat water in a steamer or a big pan. Grease a plate/mould with light oil. Finally add eno to the batter and mix gently (foam will start forming).

- Immediately pour the batter in the plate and keep it in the steamer. Steam it for 12-15 minutes on medium flame. Check by inserting a toothpick – if it comes out clean then the Dhokla is ready. When it cools down, cut it into square pieces.

- Heat oil in a pan. Add mustard seeds, curry leaves, green chillies and sesame seeds and crackle. Now add water and sugar and boil for 1 minute. Pour this tempering on the chopped dhokla.

- Serve with green chutney or sweet chutney. You can sprinkle some coriander or coconut powder on top. Also good for tiffin or light evening snack.
