Material: 1 ripe avocado (peeled and seeded), 2 tbsp thick curd (or soya curd), 1 tsp lemon juice, 1 small garlic clove (chopped), salt to taste, ½ tsp black pepper powder, 2-3 mint or basil leaves.
Method: Put the avocado in a mixer or food processor. Add curd, lemon juice, garlic, salt and black pepper to it. Blend everything until it becomes a smooth paste. Creamy, green colored healthy avocado mayonnaise is ready – use it in sandwiches, salads or toppings.
Beetroot Mayonnaise


Material: 1 small boiled beetroot (peeled and cut into pieces), ½ cup curd (or soya curd), 1 tsp lemon juice, ½ tsp ginger juice, salt to taste, ½ tsp black pepper powder.
