This recipe is easy, prepares with less ingredients and gives the taste of spices in every bite. Brinjal is fried with mild spices, making it crisp, soft and extremely tasty. This homemade masala goes perfect with fried brinjal rotis, parathas or puris and eaters will keep asking for it again and again. So let’s know its recipe.
Step 1: Cutting the Eggplant
Wash the brinjal, cut it, dry it, apply salt and keep it aside for 10 minutes so that the bitterness reduces.
Step 2: Fry the brinjal in pan
Heat 2 tablespoons oil in a pan. Add brinjal pieces and fry on medium flame until golden and soft. While frying, stir the brinjal very lightly so that it does not break.
Step 3. Frying Onions and Spices
Heat 1 tablespoon oil in a separate pan. Add onion and green chilli and fry until light golden brown. Now add turmeric, red chilli and coriander powder and fry for 1-2 minutes so that the aroma of spices comes out.
Step 4. Marinating the brinjal with spices
Add the fried brinjals to the spices. Cook on low flame for 5 minutes while mixing well so that the brinjal gets mixed well with the flavors of the spices.
Step 5. Adding salt to masala brinjal fry
Add salt and cook for 2 more minutes. If you want, you can add some green coriander and mix lightly.
Step 6. Serving with Paratha
Garnish the hot brinjal fries with green coriander. Serve it with puri, paratha or chapati. Raita or curd will also taste good with it.
- Always wash and dry the brinjal thoroughly before frying it. Wet brinjal absorbs more oil and may break while frying. Therefore, it should be dried lightly with a cloth or paper towel.
- While cutting brinjal, try to ensure that the pieces are uniform. Small or uneven pieces cook quickly and can sometimes taste bitter. Pieces cut lengthwise are best for frying.
- Before frying, sprinkle light salt on the brinjal and leave it for 10-15 minutes. This removes the bitter taste of brinjal and requires less oil in frying.
- While frying, fry on medium flame and stir the brinjal slowly. Frying on high flame can cause the brinjal to burn from outside and remain raw from inside.
- While adding spices, first fry onion, green chillies, turmeric, red chillies and coriander powder lightly. Then add the fried brinjals and mix well with the spices on low flame. This allows the brinjal to absorb the flavors of the spices well.
