Chana Saag Recipe: As soon as the winter season arrives, the harvest of green leafy vegetables begins. One of these is gram greens, which is considered to be an excellent combination of both taste and health. However, many people complain that gram greens become astringent when cooked. But if it is made using the traditional Ghotma method of Purvanchal, then its taste becomes fragrant, creamy and extremely delicious.
Even today, in the villages of Purvanchal, fresh gram greens are plucked from the fields and cooked in an earthen pot. The aroma of mustard oil, garlic and desi tadka in it enhances the taste of the greens manifold. The special thing is that this greens is not only delicious but is also full of nutrition.
Benefits of gram greens
Iron, fiber, vitamins and minerals are found in abundance in gram greens. Its warm effect gives strength to the body from within in winter. When it is cooked with bathua, peas and desi spices, its nutritional value increases even more.
Ingredients for Creamy Ghotma Saag
- half kilo gram greens
- 250 grams bathua
- 10–12 garlic cloves
- 3–4 green chillies
- 1 glass water
- ¼ cup gram flour or corn flour + ½ cup water
- 1 cup green peas
for tempering
- 4 spoons mustard oil
- 12–15 garlic cloves
- 2 green chillies
- 2 dried red chillies
- 2 pinch asafoetida
Purvanchal style recipe of chana ke saag
First of all, clean, wash and chop gram greens and bathua thoroughly. If you are using an earthen pot, then first add salt and wash it thoroughly.
Now add gram greens, bathua, salt, garlic and green chillies in the pot. Add half a glass of water and let it cook on low flame. When the greens are cooked well, mash it thoroughly with a wooden spoon so that the texture becomes completely smooth.
After this, add green peas to it and dissolve gram flour or corn flour in water and mix it with greens. This will thicken the greens and make the taste even more aromatic. Cook the greens until the peas are cooked.
Desi tadka will enhance the taste
Heat mustard oil till it smokes. Add garlic to it and fry until it turns golden. Then add dry red chilli and finally asafoetida. Immediately add this tadka to the greens and cover it, so that the aroma gets completely absorbed into the greens. Serve hot gram ghotma greens with rice, millet or corn roti and enjoy the desi taste of winter.
